Vintage Beef's Galician Cattle are free to roam on lush pastures in Gippsland and Tasmania for over 60 months. This is twice the age that normal cattle are processed, which results in a well-developed, luxurious marbling along with a delicious grass-fed flavour.
Graded into 3 distinct categories
Vintage Beef falls into three different categories, each with a different grade and quality of beef. These are:
- Reserva MB 1-2: Matured beef cuts that won't break the budget
- Galiciana MB 3+: Deliciously marbled beef from standout Galiciana cattle
- The Matriach: Bred from the finest Wagyu, aged up to 15 years, creating spectacular depth and creamy marbling
Dry aged for luxurious flavour
Vintage Beef uses a Natural State Hanging Method, which sees carcasses hung from the hip in their natural position, producing a better eating quality for striploin, rump and other hindquarter cuts.
